Curry Chicken with Ground Fenugreek

Ingredients:

  • 4 chicken breasts (cut into cubes)
  • 1 teaspoon ground fenugreek
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1 onion (finely chopped)
  • 3 garlic cloves (finely chopped)
  • 400 g canned tomatoes (crushed)
  • 200 ml coconut milk
  • Salt and pepper to taste
  • Fresh coriander for garnish
  • Cooked rice for serving

Instructions:

  1. Preparing the chicken:

    • Season the chicken cubes with salt and pepper.
    • Heat 1 tablespoon of olive oil in a pan over medium heat and sear the chicken cubes until golden and cooked through. Set aside.
  2. Preparing the base:

    • In the same pan, add the second tablespoon of olive oil and sauté the chopped onion until translucent.
    • Add the chopped garlic and sauté for another 1 minute.
  3. Adding spices:

    • Add curry powder, turmeric, ground cumin, and ground fenugreek to the pan with the onions and garlic. Sauté the spices for about 1 minute to release their aromas.
  4. Cooking the sauce:

    • Add the crushed tomatoes to the pan, season with salt to taste, and let the sauce simmer for about 10 minutes until slightly thickened.
    • Then add the coconut milk and stir well. Let the sauce simmer gently for another 5 minutes.
  5. Combining with chicken:

    • Add the seared chicken cubes to the sauce and stir. Let it cook in the sauce for another 5–7 minutes to blend the flavors.
  6. Serving:

    • Serve the curry chicken with cooked rice and garnish with fresh coriander.

Tips:

  • If you prefer a spicier version, add some chili or ground black pepper.
  • Ground fenugreek adds a slightly bitter and nutty flavor that complements the curry spices and coconut milk perfectly.
