1. Recipe

Grilled Vegetables with Provençal Seasoning

Difficulty: Easy

Preparation Time: 30 minutes

Ingredients:

  • 1 zucchini
  • 1 eggplant
  • 2 red bell peppers
  • 2 tablespoons olive oil
  • 2 teaspoons Provençal seasoning
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Cut the vegetables into equally sized pieces.
  2. In a bowl, mix olive oil with Provençal seasoning.
  3. Coat the vegetables in the oil and seasoning mixture.
  4. Grill over medium heat until the vegetables are tender and slightly charred.
  5. Season with salt and pepper and serve as a side dish or a light meal.

Provençal Chicken Thighs

Difficulty: Medium

Preparation Time: 1 hour 10 minutes

Ingredients:

  • 4 chicken thighs
  • 4 cloves of garlic
  • 150 ml white wine
  • 2 tablespoons olive oil
  • 1 tablespoon Provençal seasoning
  • Salt and freshly ground black pepper to taste
  • Several sprigs of fresh thyme

Instructions:

  1. Season the chicken thighs with salt, pepper, and Provençal seasoning.
  2. In a pan, sear the chicken thighs on all sides in olive oil.
  3. Add finely chopped garlic and sauté briefly.
  4. Deglaze with white wine and simmer covered over low heat for 45 minutes.
  5. Turn the thighs halfway through cooking.
  6. Garnish with fresh thyme before serving.
