Chives
499 Single-species spicesChives are a delicate herb with a mild onion flavor, making them an excellent addition to many dishes. They are ideal for seasoning salads, soups, sauces, cottage cheese spreads, potatoes, or eggs. With their fresh taste and green color, chives not only enhance the flavor but also add an attractive appearance to meals. They can be used fresh or dried, with dried chives retaining most of their aromatic qualities. To preserve their freshness and flavor, store them in a dry and dark place. Chives are indispensable in any kitchen that values detail and quality.

Ingredients:
- 800 g new potatoes (or other small potatoes)
- 200 ml heavy cream
- 2 tablespoons butter
- 2 garlic cloves (crushed)
- 4 tablespoons fresh chives (finely chopped)
- Salt and pepper to taste
- A pinch of nutmeg (optional)
Instructions:
-
Preparing the potatoes: Wash the potatoes and peel them if necessary. Cut larger potatoes in half or quarters, leaving smaller ones whole. Boil the potatoes in salted water for about 15–20 minutes, until tender but not overcooked.
-
Preparing the creamy sauce: Meanwhile, melt the butter in a small pot over medium heat. Add the crushed garlic and sauté briefly until fragrant (about 1 minute). Then add the cream and gently heat it through. Season with salt, pepper, and a pinch of nutmeg, if desired.
-
Creamy potatoes: Drain the cooked potatoes and return them to the pot. Pour over the prepared creamy sauce and gently stir to coat all the potatoes. Finally, add the chopped chives and stir once more.
-
Serving: Serve the creamy potatoes with chives as a side dish to meat, fish, or enjoy them as a main course with a fresh salad.
Tips:
- If you like, you can add a bit of lemon juice to brighten the flavor.
- Chives are best used fresh to retain their delicate taste and vibrant color.
