Indian Basmati Rice with Cardamom

Ingredients:

  • 1 cup Basmati rice
  • 2 cups water
  • 2 tablespoons ghee (or butter)
  • 4 whole cardamom pods
  • 1 whole cinnamon stick (about 5 cm piece)
  • 2 cloves
  • 1 bay leaf
  • Salt to taste

Instructions:

  1. Preparing the rice: Rinse the Basmati rice several times in cold water until the water runs clear. Then soak the rice in water for 20 minutes. After the time has passed, drain the rice.

  2. Toasting the spices: In a medium pot, melt the ghee (or butter) over medium heat. Add the whole cardamom pods, cinnamon stick, cloves, and bay leaf. Toast the spices for about 1-2 minutes until they release their aroma.

  3. Cooking the rice: Add the drained rice to the pot and stir, coating the grains with the fat and spices. Cook for about 1 minute.

  4. Adding water: Pour in 2 cups of water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and let the rice simmer for about 15 minutes, or until the water is absorbed and the rice is tender.

  5. Finishing: After cooking, remove the pot from the heat and let the rice rest for 5 more minutes before uncovering and fluffing it with a fork.
