Roasted Potatoes with Garlic and Premium Parsley

Ingredients:

  • 1 kg new potatoes
  • 3 tablespoons olive oil
  • 4 garlic cloves (finely chopped)
  • 1 bunch of fresh premium parsley (finely chopped)
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Lemon juice (optional)

Method:

  1. Preparing the potatoes:

    • Preheat the oven to 200°C.
    • Thoroughly wash the new potatoes and cut them into quarters (no need to peel).
    • Place the potatoes in a baking dish, drizzle with olive oil, season with salt and pepper, and toss to ensure even coating.
  2. Roasting:

    • Place the potatoes in the preheated oven and roast for about 25–30 minutes, until golden and crispy. Turn them halfway through cooking for even roasting.
  3. Preparing the garlic and parsley mixture:

    • While the potatoes are roasting, melt the butter in a pan over low heat. Add the chopped garlic and sauté for about 1 minute until fragrant (be careful not to burn it).
    • Add the finely chopped parsley and stir. Let the mixture cook briefly to keep the parsley’s bright color intact.
  4. Serving:

    • Once the potatoes are roasted, remove them from the oven and transfer to a large bowl. Drizzle with the garlic parsley mixture and toss well to coat all the potatoes.
    • Serve hot as a side dish to meat or as a standalone vegetarian meal. Optionally, add a few drops of lemon juice for extra freshness.
