Stewed Game with Juniper

Ingredients:

  • 800 g of game meat (e.g. venison, deer, or wild boar)
  • 2 onions
  • 2 carrots
  • 4 garlic cloves
  • 5-6 whole juniper berries
  • 5-6 whole allspice berries
  • 2 bay leaves
  • 1 teaspoon thyme
  • 250 ml red wine
  • 500 ml stock (beef or vegetable)
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Cut the game meat into larger chunks and season with salt and pepper. In a deep pot, heat the olive oil and sear the meat on all sides until browned. Remove the meat and set aside.

  2. In the same pot, add the chopped onions, carrots, and garlic, and sauté until the onions soften and turn lightly golden.

  3. Add the whole juniper berries, allspice, bay leaves, and thyme. Briefly sauté to release the flavors from the spices.

  4. Return the seared game meat to the pot and pour in the red wine. Let it simmer for a moment, allowing the wine to evaporate and reduce.

  5. Add the stock, cover with a lid, and simmer on low heat for about 1.5 to 2 hours, or until the meat is tender.

  6. If the sauce is too thin, you can thicken it with a little flour mixed with water. Finally, season to taste with salt and pepper.

We will send you the spices in a gift resealable doypack bag with a transparent window. The bag looks very nice, and it will keep your spices fresh and fragrant for a long time. The bag can be refilled repeatedly. Choose this option if you don't have other resealable storage for spices or if you want to give it as a gift.
